As we near the end of the Lenten season, we still have a surplus of peanut butter in our pantry. To put it to good use, I decided to whip up some delicious vegan peanut butter cookies. While cookies are typically a breeze to bake, adapting a recipe to be vegan requires a bit of tweaking. However, these cookies come together seamlessly with just a few simple adjustments. Although they’re not the typical 3-ingredient variety, they still require just a few essential ingredients.

Making the vegan peanut butter cookies

  1. Peanut Butter: This star ingredient provides the rich, nutty flavor that defines peanut butter cookies. Look for creamy peanut butter that contains only peanuts (and maybe a little salt). Make sure it’s smooth and well-mixed before adding it to the recipe. Some regions have a problem with manufacturers sweetening peanut butter during manufacturing. If you have a similar challenge, adjust the sugar measurement of the recipe to accommodate the sweetness already found in the peanut butter.
  2. Sugar: Granulated sugar provides sweetness and helps to create a crisp exterior on the cookies. For a slightly different flavor, you can substitute white granulated sugar with coconut sugar.
  3. Flour: All-purpose flour serves as the base for the cookie dough, providing structure and helping to bind the ingredients together. It’s essential to give the cookies their texture. Making vegan peanut butter cookies

Vegan peanut butter recipe

Crunchy vegan peanut butter cookies that are ready in less than 30 minutes
Prep Time 5 minutes
Cook Time 15 minutes
Servings 25 cookies

Ingredients
  

  • 1 cup peanut butter
  • 3/4 cup sugar (granulated)
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking powder

Instructions
 

  • Preheat your oven to 175°C. Line the baking tray with parchment paper or lightly grease it. Cooking spray can be used, too.
  • In a mixing bowl, combine the peanut butter, sugar, almond milk, and vanilla. Mix well until smooth.
  • Mix the flour, baking powder, and salt in a separate bowl, and then gradually add to the wet ingredients.
  • Mix until a dough forms. If the dough is too dry, add some almond milk, one tablespoon at a time until you get the right texture.
  • Roll the dough into balls and place them on your tray. Further, flatten with a fork to create a pattern.
  • Bake cookies for 12-15 minutes - or until they brown.
  • Remove cookies from the oven and let them cool for a few minutes before removing them to a wire rack to cool completely.

Notes

  • Some peanut butter brands are loaded with sugar. If that is the case, adjust your sugar measurement to your comfort.
  • The cookies must turn brown before you remove them from the oven, or else they will remain gooey, even after cooling off.
