Preheat your oven to 175°C. Line the baking tray with parchment paper or lightly grease it. Cooking spray can be used, too.
In a mixing bowl, combine the peanut butter, sugar, almond milk, and vanilla. Mix well until smooth.
Mix the flour, baking powder, and salt in a separate bowl, and then gradually add to the wet ingredients.
Mix until a dough forms. If the dough is too dry, add some almond milk, one tablespoon at a time until you get the right texture.
Roll the dough into balls and place them on your tray. Further, flatten with a fork to create a pattern.
Bake cookies for 12-15 minutes - or until they brown.
Remove cookies from the oven and let them cool for a few minutes before removing them to a wire rack to cool completely.
